Not your average banana bread

This is definitely NOT your average banana bread! And it rocks! My mom shared this recipe with me a couple of years ago- and it's been forever since I made it- but since the bananas on my counter were either destined for banana bread- or a science project- we decided to capitalize in the bread part.....

It's crazy good and goes fast- luckily this recipe makes four loaves!

3/4C. butter
3 C. Sugar
3 Large eggs
6 Bananas- very ripe
1/2 tsp salt
3 tsp baking soda
2 tsp real vanilla extract
2 tsp ground cinnamon
2 tsp cardamom (it's what sets this bread apart- go buy some!)
4 1/2C. Flour
16 oz sour cream
1 C. nuts (walnuts or pecans)
*****************************************
In a separate bowl- combine:
3Tbs. sugar
1+tsp. cinnamon (we love spice in our house- so we're heavy with the cinnamon)
Mix together with fork- you will coat the baking pans with this....(spray lightly with cooking spray- and coat with cinnamon/sugar mixture)
******************************************

Preheat oven to 300
Grease four 7x3 loaf pans and dust lightly with the cinnamon/sugar mixture
Cream butter & sugar
Mix in eggs, mashed bananas, sour cream, vanilla, cardamom and Cinnamon.
Add salt baking soda and flour to above mixture and mist well. stir in nuts.
Divide into prepared pans
Bake for 1 hour or until toothpick inserted in center comes out clean.

(I'm not that Fancy- it all gets tossed into the kitchen-Aid and spun on high until combined.... pour into pans and go)

Enjoy!
