Pico de gallo salsa

Mmmmmm....... the smell of fresh cilantro....... so bright & crisp & clean!My sweet man made his famous fresh salsa this evening for dinner- and it is heaven on a chip!
He starts by slicing the tomatoes and seeding them (then you don't have a soggy salsa).

Then chop your red onion, cilantro, garlic, fresh ground black pepper and some kosher salt.
Next comes the jalapenos.... take out the majority of the seeds and ribs to the peppers. (it is highly recommended that you wear gloves during this part of the food prep.....).

Squeeze fresh lime juice.....
Ron adds a small drizzle of olive oil to his and gives it a stir.

And that my friends.... is goodness on a chip!

Super easy- and so good for you!

And on the rare occasion you have some left.... this salsa on ham n egg n cheese the next morning... is off the charts good.....
He served this with frioles, homemade guacamole and his grilled carne asade-mmmmmmm!

it is sooo yummy! Our neighbors came over and ate dinner with us- and he's from S. America- and he loves it- so Ron feels pretty good about it. :)
