ahhh- redemption

Now while I realize it's only a monster deli-style sandwich.... it was MONEY!
And this is why..... caramelized red onion.... I could just eat this out of the pan- by it's own self....mmmmmmmm

I started with a lovely sliced French bread, fresh produce, some sliced roast beef and roast turkey, cheese, and a bit of mayo & mustard..... smothered in caramelized goodness.....

If you have the extra 15 minutes when prepping sandwiches (and this is just as incredible cold- so make extra and store in air tight container in the fridge.....) I highly recommend this simple but magnificent flavor.
Start with onion of choice- I'm a huge fan of purple/red onion. Chop coarsely- in half, and then perpendicular to that original cut (if that makes any sense....) but that way, your pieces break up into nice even sizes which is great for the palette and for cooking time. This was half of a really large onion, and I used about a teaspoon of Kosher salt and probably two tablespoons of white sugar. Drizzle with a little olive oil- and let simmer and cook down on med-high. stir every few minutes.
They will look translucent and wimpy- but the flavor- oh- the flavor- will knock your socks off! I layer these first after your mustard mayo- followed with the roast beast, some bird, some cheese and whatever produce you feel like including- I personally would have loved sprouts on here- the rest the family- not so much.
The kids didn't even want to try- but at my insistence they did- and polished off the first half and were asking for more.
You can also sneak in bell peppers with the onions...... mmmmmmmm.... great way to incorporate more veggies into a sandwich- and a chance your kids might eat it! :)

A lesson in what NOT to do.....

I had a plan for today- a very good and tasty plan......

I was going to surprise my sweet man with homemade scratch biscuits and gosh-to-goodness gravy for Father's day. He's a terrific father and hubby and he deserves it! (and I'm never home to cook anymore so I hoped that I could make up for that lag in my crazed schedule...)

And it's not like this is my first rodeo with good old country B&G.... seriously... I'm an Idaho, country raised kid... it's genetically built into my DNA to be able to prepare a dish like this- with my eyes closed!
I broke out the flour and my trusty, most favored (and my second copy of this same book because I wore out the first one.....) cookbook. I carefully followed the directions for baking powder biscuits. As I'm putting it together a couple of things are in the back of mind... like- I've never used milk in a pastry batter before.... but, ok. I realize I don't have shortening- but figure butter is just fine- and as I'm cutting in the butter- I'm thinking out loud- that this just seems too dry..... and I'm now guessing that one shouldn't use Kosher salt in baking???? And finally- and this is KEY.... baking powder- really, really.... really- does have a shelf life... and should never, ever, ever, ever- be purchased in bulk- unless you are a very busy bakery.... because you'll NEVER use it in a timely enough fashion.

With that now said and discovered..... I give you the hockey pucks I served my poor hubby.....And in my haste the other day- the tube of the Italian sausage I grabbed.... turned out to be simply ground pork- and I can tell you- that no amount of doctoring.... made it Italian sausage.....
So, my B&G were about the most lack-luster creation I've ever produced. At least his latte rocked! :)
God Bless my sweet man who cleaned his plate and patted me on the butt and said- "thanks for breakfast babe!"
I promise that lunch will be much better- I swear!

In the mean time- call your dad- wish him a day of relaxation- and tell him thank you! :)

Sweet Baby James~ part II

Not much cuter than baby feet...... this is part two of Cathy & Corey's newborn/family shoot.... they will be happy to know- I just finished their pix! Woo~hoooo!!!!
OK- a newborn thumb sucker- absolutely makes me grin ear-to-ear!!!! That is cuteness in a jar folks!

Sweet baby James and his pretty momma...

I had to laugh- we were trying to portray all the hands that will help raise him- and he was having nothing to do with my serene vision.... so it's more comical than serene- but makes me giggle all the same!

So C&C, look for an envelope from me soon- and the rest of you- have a rockin day in the sunshine- find something to make you laugh today! xoxo Didi

Sorticulture

Today, as part of my relax and take a day off plan... I hopped in the mom-van with my girl Dr. Nicky and her mom, daughter & sis who are visiting from out of state. We attended Everett Parks "Sorticulture"... what fun! So many wonderful food and artisan vendors- your head spins- wondering where to look or shop first!

I felt more than a little conspicuous with my camera and monster lens on- but figured I'd see some great flowers as we were at the park and arboretum.... I couldn't believe how many vendors had signs saying "NO PHOTOS"(and I totally understand- the worry over folks stealing their creative ideas) .... so of course people were giving me the eye as I'm walking around.... oops- my bad....

There were a couple of vendors that I had a great time chatting with- and I asked permission to take a couple of shots because I loved the color and texture of their displays and they were gracious enough to let me play. :)

I purchased one of these delicious double dyed silk scarves as a prop ladies... think belly pix or pin-ups.... ooooh-la-la! :) I loved Vashon's own Sooze of Laughing Magpies,
"an emporium of color & delight" and was she ever! A great chat and FUN stuff!

Coeur d' Alene's John of Dog and Pup Studios- had some incredible art glass- wish I could have a window FULL of this amazing stuff! You can find them here:
It was a fun time with the girls. You should definitely look into attending this event next year!

Techni-color

My friend Beth contacted me a while back and said- "it's time for some new family photos..." and she had a twist- we were doing buddy photos with one of her bestest girl friends who would be visiting from out of town with her kids. They are God-moms to each other's kids and wanted some photos of all of them playing, hanging out and having fun. So I threw convention and all of the rules about simplicity in clothing for photos out the window yesterday- and found lots of wonderful, bright colors- the more the better! It's a bout fun here!!!!!
Garren and that perfect spray of freckles and those eyes..... oh- those eyes! Gracie was so excited to show me the holes from her newly missing teeth-and to push her tongue through that space-- love that girl! Hayden is on his way to being gorgeous man on campus....look at those dimples and that chin- look out ladies!
Trish is so fun and it's easy to see where Hayden & Hannah get those eyes and looks from!
Hannah- OMGosh- can you say gorgeous?????
It was silliness and off the cuff the whole session!
I had so much fun ladies- thanks so much for choosing me!

Riley Girl

You know- some shoots, just don't go like you planned...... this one went really well- but I had to start with the photos we ended with- because I thought it was hilarious.... those are some serious crocodile tears! And she was such a good sport through all the clothes changes and being handled and messed with- but we were near nap and nursing time- and she was DONE with us messin' with her!
Really, truly- she was such a good baby and she was sporting some seriously cute gear. I particularly love the above outfit from Diva 911 here in Lake Stevens. If you haven't been in to check out my girl Jackie's shop- you should... too much good stuff in there!

I looooovvvvveeeee her cheeks.. and her feet- and her little baby neck.... I could nibble and love in this girl all day long!
And blessed they are! :) Sweet girl!

Nothing says CUTE like a pair of ruffled undies.... these are by Ruffle Butt.... love it!!!!

This shot- I think- is worth the price of admission... blown up big- I LOVE this shot with a capital L!

What a gorgeous family!
And I absolutely love that they can be silly with me! Thanks soooo much guys- I had a ball today! So here's your preview for now... stay tuned for more coming your way!
